Let’s see how to cook aloo kotfa curry today
To make aloo kofta, we need to prepare koftas first
Here I boiled, peeled and mashed 3 potatoes
Potatoes are approximately 1/4 kg in weight
These potatoes could be mashed or grated
Add 3 tablespoons corn flour along with 3 tablespoons bengal gram flour
Here, bengal gram flour could be skipped and only 6 tablespoons of corn flour could be used
Then add, 1 chopped green chilli, chopped coriander leaves, 1/2 teaspoon chilli powder, 1/2 teaspoon salt and mix
There is no need to add water since the potatoes and coriander leaves added will already have moisture in them.
Knead the mixture into a chepathi batter like consistency
Spread some oil on your palms so that it doesn’t stick to the hands
Roll the dough into lemon sized round balls
Heat oil for deep fry
Add the koftas and cook on medium flame
Flip and fry till they turn golden brown
Move them into a different plate
Let’s prepare the gravy now
For the gravy, grind 2 onions into a paste
Also grind 3 tomatoes
Heat 1 tablespoon oil in pan and add 1/2 teaspoon cumin seeds and fry
Add onion paste and cook
Close lid and cook till it changes colour slightly
Add 1/2 teaspoon turmeric powder, 1/2 teaspoon ginger garlic paste and fry
Add prepared tomato paste and close lid
Cook on medium flame till oil seeps out of the tomato paste
Now add 1 teaspoon chilli powder, 1 teaspoon salt or salt to taste, 1/2 teaspoon coriander seeds powder and mix
Add some water for the gravy now
Then add 1/4 teaspoon garam masala powder and mix
Cook the gravy for a minute or two and add the prepared koftas to it
Stir the curry, close lid and cook for 5-6 minutes on low flame
Move the curry into a serving plate and garnish with coriander leaves
Serve hot with rice or roti!
