Try this chicken fry or chicken roast recipe by Recipe Factory that is not only easy and simple to make at home, but also very juicy and tasty that will keep you coming back for more! Ingredients

1. Chicken – 1 kg
2. Onions – 1/2 Cup
3. Dried Chillies – 10-12
4. Coriander Seeds – 2 Tablespoons
5. Garlic Cloves – 10-12
6. Cumin Seeds – 1 Teaspoon
7. Turmeric Powder – 1 Teaspoon
8. Salt – 2 Teaspoons
9. Shahjeera – 1/2 Teaspoon
10. Cloves – 6
11. Cinnamon Sticks – 3 Small Pieces
12. Cardamom – 4
13. Pepper – 1/2 Teaspoon

 

Recipe Notes for Chicken Fry

Heat 2 tablespoons clarified butter (ghee) in a pan

Oil or butter also could be used

Add chopped onions and fry

Fry till they change colour

Add 1 teaspoon turmeric powder and mix

Add chicken pieces and mix

Close lid and cook on medium flame

Let the chicken cook nicely in oil

Let’s prepare masala in the mean time

Heat pan and fry 2 tablespoons coriander seeds

As they change colour, add 1 teaspoon cumin seeds and fry

Add dried chillies

The quantity of dried chillies depends on your taste

Fry till they change colour

Add whole garam masala – cardamom, cloves, shahjeera, cinnamon sticks, pepper and fry

Cut off the stove and let it cool down

In the mean time, stir the chicken

Cook till the water seeping out of the chicken boils away

Powder the previously fried ingredients along with garlic cloves

Chicken is almost cooked now

Add the prepared masala, salt to taste and mix

Stir and close the lid

Cook on low flame

Here I’m adding a little bit of food colouring

This step is optional

More chilli powder or salt could be added here if necessary

Cook on low flame for 10 more minutes

Cook on low flame till required consistency is obtained

Sprinkle coriander leaves, curry leaves and cook for 5 more minutes

Serve with rice or roti
