Drumstick Pickle | Homemade Drumstick Pickle

1. Drumsticks – 3
2. Chilli Powder – 8 Teaspoons
3. Salt – 6 Teaspoons
4. Mustard Seeds Powder – 3 Teaspoons
5. Tamarind – 30-40 Grams
6. Ginger Garlic Paste – 3-4 Teaspoons
7. Cumin-Fenugreek Seeds Powder – 1 Teaspoon
8. Tempering Seeds
Recipe Notes for Drumstick Pickle
Wash the drumsticks and let them dry
Peel off the skin.
Cut them into pieces.
Here the tamarind is boiled and ground into a paste.
Since it is a pickle, water needs to be avoided.
Add 200 ml oil.
Drumstick pieces needs to be deep fried till they slightly change colour.
Let’s prepare tempering now.
Heat remaining oil.
Add 2 teaspoons mustard seeds, 1 teaspoon cumin seeds, 2 tablespoons bengal gram, 2 tablespoons black gram and fry.
As they start to change colour, add 7-8 dried chillies and fry.
Then add ginger garlic paste and fry.
Curry leaves also could be added.
Cut off stove after a minute
Let it cool down.
Move tempering into a bowl
Add 8 teaspoons chilli powder, 6 teaspoons salt or salt to taste, 3 teaspoons mustard seeds powder, 1 teaspoon cumin-fenugreek seeds powder and tamarind paste
Here you can add more oil if needed.
Add fried drumstick pieces
Let it sit for 1-2 days for it to set.
Serve with rice.
