Hyderabadi Mutton Haleem

Hyderabadi Mutton Haleem a mouth watering, super tasty recipe, Its healthy and nutritious as well. Can be relished by everyone, a complete meal for any special occasion.

 

Ingredients :

  • Mutton                             : 1/2 Kg
  • Onions                              : 3 Onions chopped fried crisp (Brown Onions)
  • Curd                                  : 100 Grams
  • Red Chili Powder           : 2 Teaspoon
  • Salt                                    : 1 Teaspoon
  • Turmeric Powder           : 1/2 Teaspoon
  • Garam Masala Powder  : 1/4 Teaspoon
  • Mint Leaves                       : 1/4 Cup
  • Coriander Leaves            : 1/4 Cup
  • Lemon Juice                    : 1 Tablespoon
  • Ginger Garlic Paste        : 2 Tablespoons
  • Green Chilies                   : 2 No’s
  • Cardamom                       : 5 No’s
  • Star Anise                         : 2 No’s
  • Cloves                                : 5 No’s
  • Cinnamon                         : 2 sticks small
  • Caraway Seeds                 : 1 Teaspoon
  • Tail Pepper                       : 1 Teaspoon
  • Water                                 : 2 Glasses
  • Wheat Semolina              : 100 Grams
  • Masoor Dal                       : 1 Tablespoon
  • Bengal Gram                   : 1 Tablespoon
  • Black Gram                     : 1 Tablespoon
  • Green Gram                     : 1 Tablespoon
  • Barley                                : 1 Tablespoon
  • Sesame Seeds                   : 1 Tablespoon
  • Basmati Rice                    : 1 Tablespoon
  • Cashews                            : 5 No’s
  • Almonds                            : 5 No’s
  • Coriander Powder           : 1 Teaspoon
  • Ghee                                   :  8 Tablespoons

 

Method of Preparation :

  • Initially will prepare Brown Onions, for them take 3 Onions finely chopped and deep-fried till crisp and brown.
  • Take 1/2 Kg Mutton to wash it and marinate it.
  • In a mixing bowl take mutton, add 100 Grams Curd, 2 Teaspoons Chili Powder, 1 Teaspoon of Salt.
  • Then, add 1/2 a teaspoon of Turmeric Powder, 1/4 Teaspoon Garam Masala, 1/4 Cup of Mint and Coriander Leaves each.
  • Now will add 1 Tablespoon of Lemon Juice and 2 Tablespoon of Ginger Garlic Paste mix them all.
  • Add 1/4 Cup of Brown Onions too, Let the Mutton be marinated for 1/2 an hour to 1 hour.
  • After the marination in a Pressure cooker heat 2 Tablespoons of Ghee and add whole Garam masala.
  • Add 5 Cardamoms,  2 Star Anise, 5  Cloves, 2 Cinnamons, 1 Teaspoon of Caraway Seeds, and 1 Teaspoon of Tail Peppers and fry them for a while.
  • Then, will add marinated mutton. Let it cook on high flame for 5 to 10 Minutes with a lid stirring it occasionally.
  • Ad  2 Glasses of water and pressure cook it till 1 whistle on high flame.
  • Lower the flame and let it cook for 30 minutes.
  • In meantime will prepare Daliya for the Hallem.
  • Take 100 Grams of Wheat Semolina in a bowl.
  • Take 1 Tablespoon of each on of them, Masoor Dal, Bengal Gram, Black Gram, Green Gram, Barley, Sesame Seeds, and Basmati Rice
  • Add 5 Cashews, and Almonds each and grind them all coarsely in a mixie jar.
  • Heat 1 Tablespoon of Ghee in a pan and roast Wheat Semolina and the ground mixture of lentils and roast them well.
  • Add 1/2 a Litre of water to it and cook them all till soft and tender and put off the flame.
  • Now will check the Mutton pressure cooked, we can see it well cooked and looks soft and tender.
  • Take some stalk and store it for further use.
  • Put on the flame and cook the mutton till water is completely evaporated.
  • Let it cool down for a while, then separate all the bones from the cooked mutton and transfer it to a bigger vessel.
  • Mash it with the masher, and mash the Daliya we cooked earlier.
  • Now mix them both and mash them well so that all the flavors blend in well.
  • Add the stalk to it and mix well, add 1/4 Cup of Mint and Coriander Leaves and mash them well.
  • Now, will add 1 Teaspoon of Coriander Powder, salt as needed, 2 Tablespoons of ghee, and 1/2 a Teaspoon of Pepper Powder and blend them well.
  • Place the vessel on the stove, cook it on high flame for 5 to 10 Minutes.
  • Add brown onions and cook it till required consistency.
  • Mutton Haleem is ready! Garnish it with some Ghee, Roasted Nuts, and relish it.
