Ingredients

1. Basmathi Rice – 2 Cups
2. Paneer – 400 Grams
3. Boiled Green Peas – 1/2 Cup
4. Tomato – 1
5. Onions – 1
6. Coriander Seeds Powder – 1 Teaspoon
7. Chilli Powder – 1 1/2 Teaspoon
8. Turmeric Powder – 1/2 Teaspoon
9. Ginger Garlic Paste – 1 1/2 Teaspoon
10. Cumin Seeds Powder – 1/2 Teaspoon
11. Garam Masala Powder – 1/4 Teaspoon
12. Salt – 1 1/2 Teaspoon
13. Mint Leaves – 1/2 Cup
14. Coriander Leaves – 1/2 Cup
15. Green Chillies – 2
16. Bay Leaves – 3
17. Cinnamon Sticks – 3 Small Pieces
18. Shahjeera – 1 Teaspoon
19. Cardamom – 4
20. Cloves – 6

Recipe Notes for Paneer Pulao

Soak basmathi rice for half hour.

Fry paneer next.

This step is optional.

Heat pan and fry paneer till they turn brown and move them into a different plate.

Heat 2 tablespoons clarified butter (ghee) in pan

Oil or clarified butter could be used

Add bay leaf, cinnamon sticks, shahjeera, cardamom, cloves and fry for a couple of minutes

Add diced onions and fry

As they start to change colour, add green chillies and boiled green peas

Fry for 2-3 minutes and add tomatoes

Close lid and cook till tomatoes become soft

Add 1/2 teaspoon turmeric powder, 1 1/2 teaspoon ginger garlic paste and mix

Stir and add mint leaves and coriander leaves

Add 1 1/2 teaspoon chilli powder, 1 /12 teaspoon salt or salt to taste, 1 teaspoon coriander seeds powder, 1/2 teaspoon cumin seeds powder and mix

Stir and add 4 cups water for 2 cups rice

Close lid and boil

Add soaked rice, fried paneer and mix

Close lid and cook for 5 minutes

Add garam masala powder and boil till water boils away

Add fried cashew nuts (optional)

Close lid and cook for 5 minutes on low flame

Serve hot!
